Childhoods and ice cream trucks always seem to coincide with each other. In every piece of media, the sweet song of ice cream trucks were always followed by a chorus of joyful screaming. However, as we got older, this same sentiment diminished. Granted, seeing an ice cream truck sparks some interest, but for many that magic is not there. The closeness between the chef and customer makes food trucks a unique experience, and every dish seems to be a little more personal. 

Other than the special interactions, food trucks are exciting because of the food itself. Historically, food trucks are known for combining iconic cultural foods into delicious meals. Korean bulgogi tacos, sushi burritos, ox-tail mac and cheese, and so many more are just some of the mouth-watering creations food trucks have made over the years, and these are just the staples. Food trucks allow the chefs to experiment with what they find delicious, without the constraints of conventional cooking. This obviously has led to some insane creations, but it allows their customers to explore new tastes and go on a culinary journey themselves. Imagine being stuck between wanting Mexican food or Korean food, and then having your very first bite of a bulgogi taco. Food innovation thrives in food trucks, hence why they are so popular worldwide.

Beyond the delicious foods, food trucks are amazing for another reason: convenience. Requiring minimal set up, they are event organizer's dream. They mostly bring their own equipment, eliminate the need for extensive indoor kitchen space, and have less cleanup in general. Also, having multiple foods trucks eliminates the long waits typically seen in catering lines. It is a service that has little to no negatives.
